Fun Ideas for the Leftovers

Here are a couple of recipes for your turkey leftovers.

Quick Turkey Warm ups
1 box Stove top Stuffing
1 can Cream of Mushroom soup
Sliced cooked turkey
Sliced swiss cheese optional
Dilute Cream of Mushroom soup with 2/3 can of milk. Then pour just enough to cover bottom of 9x13in pan to keep from sticking . Cook up your stuffing then place evenly on bttom of pan. Then place sliced turkey over top. Take the rest of your Cream of Mushroom soup and pour over the top. Cover with foil and heat in your oven at 325 degrees for approx 30 minutes. If you want to add the swiss cheese remove foil last 5 minutes and place sliced cheese over top and melt. Quick easy and tasty.

Turkey Bunwich
2 cups diced cooked turkey
1 cup diced celery
4 hard boiled eggs diced
 1 to 2 cups mayonaise or miracle whip
1/8 tsp garlic salt
1/8 tsp onion salt
1/8 tsp curry
1/4/tsp worcestershire
Sliced  chedder cheese
Combine salad dressing and seasonings & pour over turkey celery & egg mixture and blend well let stand in fridge at least 3 hours to enhance the flavors.
Place on hamburger bun top with cheese and place under broiler until cheese is melted.

Turkey Enchiladas
                                                                                      3 Tbsp flour
1/4 cup chopped onions                                                1/2 tsp dried Oregano
1 clove minced garlic                                                     2 cups Chicken broth
1 Tbsp Butter                                                                1/2/cup sour cream
2 Cups Cooked Shredded turkey                                   8 Flour Tortilla's
1- 4 oz can Diced Green Chili's                                     1-1/2 cups grated Colby Jack cheese
2 Tbsp Butter                                                                1- 4oz can sliced olives (optional)

Saute onions and garlic in butter . Stir in turkey,chilies and oregano. Heat thoroughlyand set aside in bowl.

In the same sauce pan melt the 2 Tbsp. butter, stir in flour and cook for 1 minute, gradually stir in broth .cook until slightly thickened. Add sour cream and remove from heat. Stir in 1/2of sauce into turkey mixture.
Fill each tortilla with turkey mixture and 2 Tbsp Jack Cheese. Roll-up and place in buttered baking dish. Por remaining sauce over tortillas and sprinkle with remainder of cheese and sliced olives.
Bake at 375 degrees, uncovered for 20 minutes

Cooking a Fresh Turkey

An all natural fresh turkey tends to cook faster than the ones you buy commercially . With our turkeys we recommend you cook them at 325 degrees  and figure 15 Minutes per pound unstuffed. If they are stuffed then 20 minutes per pound. They also have pop-up timers that work great. be sure to let the turkey set out of the oven approx 20 to 30 min before carving they will slice better for you that way.
